Too many plates

I have a problem. And while to some this may not sound like a problem, it's definitely a problem for me. Because here's the thing: I have too many ideas. 
Like I said, some of you might not see why that's a bad thing, but let me tell you. If I could stick with just one, I probably wouldn't be sitting here writing a blog post because I would be too busy working on said idea and creating the next story. The problem is I have so many ideas that all want my full attention that I can't focus on just one, so I'm not really getting anything done. Wanna know all my projects that are floating around in my head right now?
  • Book 4 of the Simple Love series
  • A Robin Hood retelling that is just way too much fun
  • A superhero/X-men type sci-fi that is far more action-based than what I usually write
  • A Pride and Prejudice adaptation that again is way too much fun
  • A western with a female outlaw and a clumsy bounty hunter who has no clue what he's doing
  • A gazillion short stories about the Simple Love boys who all think they need to tell their own stories
  • A time travel romance
  • The first of a spin-off series from the Simple Love Stories
  • A Mulan retelling with a murderous twist
  • And so many more
This is why it's a problem, not a blessing, because all of these things are far too intriguing for me to put them on the back-burner, which means I feel like I'm trying to cook a dozen dishes on one single flame and expecting everything to come out perfectly cooked.
Somebody send help!
Or maybe just tell me to close my eyes and point, and stick with that until it's actually finished. Pin the plotline on the story, anyone?
Needless to say, there's plenty more coming, and as soon as I can actually sit myself down to work on something, I'll have the next book out there in the world for me to grin at because I made a thing and it's pretty.

I do one project at a time , but I might not finish it all the way. It also might be something that was not "on my list" but I was in the mood to do it so eveything else took a back seat.

I also have the obstacle of having too many ideas. I meditate and afterwards, I have more clarity on how to prioritize these ideas.
